Well, the trees look dormant

Traditionally, winter pruning is carried out while the trees are dormant. The mild autumn meant that dormancy was a bit delayed this year, but they certainly look dormant now! There is some debate as to whether it is a good idea to prune in frosty weather. I’m not sure the trees mind, but I can say that the pruner can get pretty chilly, so if you do prune when it’s very cold, be sure to wrap up warm and don’t prune your own fingers through carelessness or frostbite. The ideal is to return inside to a glass of mulled cider (but don’t prune after drinking).
